Ingredients:

  • 2 large bananas, mashed
  • 1 cup full-cream milk*
  • 1 tbsp apple cider vinegar
  • 1 tbsp vanilla extract
  • 3 scoops Nuzest Clean Lean Protein, Smooth Vanilla
  • 1/2 cup coconut sugar or monk fruit
  • 1 2/3 cups self-raising flour
  • 3 tbsp melted butter or coconut oil
  • 1 cup walnuts
  • 1/2 cup sugar-free chocolate chips

Method:

  1. Preheat oven to 180C/350F. Line a loaf pan. 
  2. In a bowl, mix bananas, sugar, milk, vinegar, vanilla, and protein until smooth. 
  3. Add flour; mix until just combined. Fold in walnuts and chocolate chips. 
  4. Pour into pan. Add sliced banana or walnuts on top if desired. Bake 50-55 minutes, or until a skewer comes out clean. 
  5. Cool completely before slicing.
Notes: Bake on the centre rack for an even cook. Full-cream milk recommended. *Can sub full-cream coconut milk.
